Burn and Paneer in SE1 has one of the better names in South London Indian food. Burn and paneer captures the two sensations at the heart of North Indian cooking — the char and caramelisation of the tandoor, and the soft, mild cottage cheese that absorbs the bold spicing around it. Paneer tikka comes out of the tandoor with that characteristic scorched exterior; the interiors stay cool and yielding.
